Smashed Cucumber Salad

INGREDIENTS
  • 1/2 lb cucumber (English, Turkish, Persian all work fine)
  • 2 Tbsp salt
  • 1 Tbsp rice vinegar
  • 2 tsp sesame oil
  • 2 Tbsp soy sauce
  • 3 cloves garlic
  • 1 Tbsp chili pasta/sauce (sambal oelek preferred)
  • 1 Tbsp sugar
DIRECTIONS

STEP 1

Lightly smash cucumbers with hands, mallet, or back of knife.

STEP 2 

Salt cucumbers and mix to incorporate. Let cucumbers rest for 30 minutes to allow them to sweat out moisture.

STEP 3

Mix rice vinegar, sesame oil, soy sauce, minced garlic, chili pasta and sugar in a mixing bowl.

STEP 4

Drain cucumbers (do not rinse) and toss into mixing bowl, incorporating the sauce. Enjoy!
