COOKIN’ WITH CAPITAL
1 cup sugar
1 cup Karo syrup
2 cups peanut butter
6 cups Special-K cereal
1 cup chocolate chips
1 cup butterscotch chips
STEP 1
Bring sugar and Karo syrup to boil. In a large mixing bowl, put 2 cups peanut butter. Pour hot sugar/syrup over peanut butter and mix well.
STEP 2
Add the 6 cups Special K cereal and mix well (make sure there is enough syrup in the mixture to make it moist enough to compact).
STEP 3
Spray a 9×13 baking dish with cooking spray. Compact ingredients firmly into dish, paying special attention to the edges.
STEP 4
When you start boiling the sugar and syrup, melt the chocolate and butterscotch chips. You can use more chips if you want a thicker chocolate/butterscotch topping. (Grandma would use a 12 oz semi-sweet chocolate morsels bag and an 11 oz butterscotch morsels bag).
STEP 5
Spread this chocolate/butterscotch mixture on top of the ingredients in the baking dish while the cereal/peanut butter is still warm. Let cool completely and cut into bar size pieces.
NOTE
For a sweet and salty treat, feel free to top with sea salt.
STORY
All my life, I’ve known this dessert as “Grandma’s cookies.” They were a staple at every holiday gathering and were always the most requested dessert item. Since my grandmother’s passing, my father (her son) has taken over the tradition of making sure this sweet treat continues to be made. And, yes, every member of my family still refers to these as “Grandma’s cookies.”
