Furikake Fried Chicken

INGREDIENTS

Sauce:

  • 1 cup brown sugar
  • 1/2 cup white sugar
  • 1 1/5 cups soy sauce (shoyu), such as Aloha or Kikkoman
  • 1/3 cup water
  • TT freshly ground black pepper
  • 4 large cloves garlic, minced
  • 1/2 tsp fresh ginger, grated

Fried Chicken:

  • 1 quart deep-frying oil
  • 1-2 lbs boneless skin-on chicken thighs
  • 2 cups all-purpose flour
  • 1 Tbs garlic powder
  • 1/2 tsp pepper
DIRECTIONS

STEP 1

For sauce: Combine the brown sugar, white sugar, soy sauce and a sprinkle of black pepper in a braising pan with high sides. Whisk to dissolve, and then bring to a boil over high heat. Boil for 2 minutes, then add ginger and remove from heat immediately and let cool to room temperature, then whisk in the garlic.

STEP 2

For the fried chicken: Preheat the frying oil to 350° F.

Dredge chicken thighs completely in the flour-garlic powder mixture. Submerge in frying oil until crispy golden brown, 11 to 15 minutes till golden brown. Let the fried chicken drain for 2 to 3 minutes.

STEP 3

Briefly submerge the hot, fried chicken in the sweet and savory sauce. Or serve the sauce on the side. Serve fried chicken with steamed white rice. Garnish with green onions and a confetti of furikake flakes (Japanese condiment).
