Duval Banana Bread

INGREDIENTS
  • 2-3 very ripe bananas
  • 1/2 cup unsalted butter, at room temperature
  • 1/4 cup  white sugar
  • 1/2 cup packed brown sugar
  • 2  large eggs, lightly beaten
  • 1 ½ cups all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1/2 tsp vanilla extract
DIRECTIONS

STEP 1

Preheat oven to 325 degrees F. Grease and flour a bread loaf pan (9.25” long x 5.25” wide x 2.75” deep).

STEP 2

In a mixing bowl, mix softened butter and sugar.

STEP 3

Mash bananas with a fork until the consistency of chunky applesauce and add them to the batter along with eggs, mixing until blended.

STEP 4

In a separate bowl, whisk together flour, baking soda, and salt. Add to batter.

STEP 5

Put loaf pan into a casserole pan with some water.

STEP 6

Bake for 90 minutes or until toothpick inserted into the center comes out clean. Put foil tent on top after 60 minutes.

STEP 7

Let banana bread rest for 10 minutes before transferring to a wire rack to cool. Enjoy!
