Cowboy Caviar

INGREDIENTS
  • 11 oz can corn, drained

  • 15 oz can black-eyed peas, drained

  • 11 oz can black beans, drained

  • 3 Roma tomatoes

  • 2-3 avocados, sliced into chunks

DRESSING INGREDIENTS

  • ¼ cup olive oil
  • ¼ teaspoon garlic (minced or chopped)
  • 1/8 teaspoon black pepper
  • ¼ cup red wine vinegar
  • 1 teaspoon cumin
DIRECTIONS

STEP 1

Mix all canned items, tomatoes and avocados together in a large bowl. Add dressing ingredients and mix well.

STEP 2

Give the mixture an hour or more to soak up the dressing by storing it in the refrigerator until ready to use it as a salsa, a chip dip, on pitas, burritos, or on top of salads.
