COOKIN’ WITH CAPITAL
STEP 1
Preheat oven to 325° F. Grease a 9×5” loaf pan, preferably glass but not required.
STEP 2
Mix flour, baking powder, baking soda, and salt in a bowl. Set aside.
STEP 3
In another bowl, stir bananas, milk, vanilla, and cinnamon.
STEP 4
In yet a third bowl, beat butter and sugars until light and fluffy. Add eggs to butter mixture, one at a time, beating well after each addition. Stir banana mixture into butter mixture.
STEP 5
Stir in dry mixture into butter/banana mixture until just blended. Lastly, fold in chocolate chips until just combined. Pour batter into prepared loaf pan.
STEP 6
Bake in the preheated 325° F. oven until a toothpick inserted into the center comes out clean, about 70 minutes. Cool in the pan for 10 minutes before removing to cool completely on a wire rack before slicing.
(but we all know you will be trying a slice before it cools completely, just watch out the chocolate chips will be like little lava-bombs. You have been warned!)
STORY
Do you have those old black-skinned bananas you are about to toss out. Wait! That is some super-flavor-banana-goodness you can convert into an amazing bread/dessert. It’s called chocolate chip banana bread, and makes a great dessert when you pile some vanilla ice cream on top. If you are not ready to convert your black bananas into some delicious dessert bread, throw them in the freezer and when thawed, they will be the perfect banana mush to make this recipe.
